In a heist, its vital to enlist someone or something that knows the seedy underbelly of the city, someone who hadn’t merely adopted the darkness but was born into it.  The Angler Fish (Ceratias hobolli) also known as the black devil, is the queen of the oceans deep.  With her razor-sharp translucent teeth and bioluminescent lure, the female Angler Fish is one of the most intimidating fish in the sea.

 

Vodka predates every other spirit, first appearing in the 800 to 900’s.  It wasn’t known as Vodka until 1405 when it was classified as medicinal and used to awaken lust and increase fertility.  With a turbulent history through Poland and Russia, Vodka has a deep connection within our history and now consumed all over the world.

OUR STILL

 

Our still is an eight plate column still specialised for producing an extremely pure spirit. Our  glycol-cooled fermenters pump fresh wash into the still every two weeks ready for the alcohol to be transformed through the still. This initial distillation process produces a product referred to as low-wines, which is blended and combined before being run through the still for the next phase of distillation. Our final cut, or hearts, of this second run, are then selected to be proofed down with pure filtered water and bottle aged.

Derived from the creatures that inhabit our deepest oceans, each drink is a quest for adventure and exploration.

 

Our Angler Fish carries her distinctive lure, a feature that is only worn by the females, used to attract her prey along with the males of her species who latch on and never let go, which brings truth to the original belief that Vodka awakes lust and improves fertility.

 

Living in the depths with limited light, adaptive sensory receptors are essential for the fine-tuned Angler Fish.  Comparatively, we use analogue instruments and glassware relaying on touch, taste and smell.  With our fine heart cuts, we don’t need to carbon filter our Vodka, using a double distillation method through an eight-plate column gives our product its own unique characteristics to be savoured and appreciated.

 

Taste.

 

Drinking the vodka neat is best as it allows for the natural flavours of the raw ingredients to be appreciated. The warm notes from our single origin wheat malt blends with the caramel and molasses base from the 100% cane sugar bringing a smooth and slightly sweet taste.

 

We also enjoy our vodka with a dash of soda water with lime quarters on ice, which leaves a crisp and clean palate perfect for any afternoon tipple or with a hint of dry ginger ale also accompanied with lime and ice. For the sweet tooth, our vodka makes an easy transition into your favourite cocktail or with lemonade.  The White Russian is an easy ‘go to’ for a night cap or aperitif.

The Finest Ingredients.

 

We only use Australian raw ingredients source locally where possible.  We undertake all the fermenting within our distillery allowing us to manage and oversee every step of the process.  As a result, the process is slower as we do not import mass produced ethanol.  We strive to produce a premium product giving quality assurance, which you can enjoy in confidence knowing the origin and the journey.

 

Our sugar is sourced from the oldest continuously operating sugar mill in Australia, the Harwood Refinery Mill, which has been crushing cane since 1874 and sits on the banks of the Clarence River in New South Wales.

 

Sourcing our wheat from Voyager Craft Malt in the Riverina region in New South Wales allows us to work closely with Australian farmers to be able to provide a high quality and uniquely local product.

The Distilling Process.

 

By managing our own ferments onsite we can keep our yeast in the ideal conditions necessary to make the purest alcohol. Managing the yeast activity in our custom designed temperature control tanks, with the correct amount of nutrients is the foundation of where Critters Vodka begins.

 

Combining our ingredients with specialist nutrients created in house, we feed our yeast only the best Australian sugars and converted starches. Once fermentation is complete, our ferments are allowed to settle out naturally without the need for crash chilling.

 

Nothing is forced here in our distillery, and we believe that whilst this process can be slower, its yields better results and a uniqueness unlike any other. Before each batch is transferred into our still, we filter out any remaining yeast and sediment through a 5 micron filter, and begin the first "stripping run" to extract the alcohol.

 

The Still.

 

Our still is a 200lt modular 8 plate column still, capable of producing up to 96% alcohol from each run. Each plate in the still helps remove impurities by recondensing the vapours in a bath of alcohol and sending them back down into the still, essentially distilling the product multiple times in a single pass. This process creates an extremely pure product in a single run.

 

However we dont stop there, once the stripping runs are completed and we have removed any undesirable products, we then run the spirit back through the still again, redistilling and further increasing the purity of our final product. During this final run our alcohol is separated into fractions called Heads, Hearts and Tails. We only select the purest Heart fraction for final proofing, blending and bottling.

Filtration.

 

Often spirits are filtered multiple times through activated carbon to further remove impurities created during the distilling process, we do not carbon filter our final product. Using our distilling process and techniques means our Vodka does not need any further treatment before bottling. Carbon filtering impacts the final texture of Vodka, making it thinner and removing any mouthfeel on the palate, it also removes many of the flavours we have worked to develop. Our Vodka can be classified as a whisky drinker's Vodka, it has body and soul untouched by filtering.

 

All our water used on site is also filtered multiple times, removing any sediment, chemicals, taste or impurities. This water is used in both our fermenting process and proofing process which we blend with our final spirit to lower the alcohol content 40% abv before bottling. Each bottle is filled, labeled and sealed by hand, we personally make sure every bottle meets the strictest quality control and standards.

Re-Use of Waste Materials.

 

We have adopted a waste avoidance and resource strategy, importantly because we are located on the fringes of the Solitary Islands Marine Park and we strive to reduce our carbon and waste footprint.  We are proud to operate as a ‘dry distillery’, noting that distillery operations can generate waste waters and waste products.

 

Using cane sugar also assists in reducing our grain waste products. The spent grain from each batch is collected and used by farmers for feedstock (pigs and chickens love it!) as it is rich in protein, flavour, vitamins and other nutrients suitable for animal consumption.

 

The residual product from the fermenting process and spent lees from the end of the distillation process are collected into portable IBC tanks, pH corrected and used by farmers for land irrigation and gardening.

 

The remaining alcohol product, rich in methanol and ethanol, is an excellent cleaning solvent for sterilising equipment and cleaning around the distillery.

OUR DISTILLERY

 

Our distillery houses seven custom made glycol cooled fermenters with a total of over 3000 litres of fermenting power. These feed our two unique eight plate bubble cap column stills that are specialised for producing an extremely pure spirit. Our largest still has a capacity of 620 litres and processes the raw fermented product into 93% alcohol, this initial distillation process produces a product referred to as low-wines, which is blended and combined before being run through our smaller 250 litre spirit still for the next phase of distillation. From this run we select a final cut, or hearts of the run which are proofed down to 40% with pure filtered water and bottle aged to become our unique Vodka.
